The reflector allows moisture to escape (to prevent sogginess) while reflecting heat back down to cook the toppings and crust. The dual cordierite stones create a pocket of air between them to minimize hot spots.
The Pizzeria Pronto received and Editors' Pick Award from The Gourmet Retailer in the competitive kitchenware / tabletop category in 2014.
